Ingredients:
Arum (arbi) : 500 gms
Onion : 1 medium sized (cut into rings )
Tomatoes : 2 medium sized ( finely chopped)
Cumim seeds(jeera) : half tsp
Carrom seeds(ajwain) : half tsp
Turmeric powder : one fourth tsp
Salt to taste
Oil for deep frying + 1tbsp for shallow frying
Corainder powder : half tbsp
Dry Mango Powder : half tsp
Method :
1. Pressure Cook arbi for one whistle along with peel .Put little salt while boiling .
2. Remove the peel and press lightly with your palms and deep fry .
3. Heat oil in a separate pan , add jeera and ajwain seeds .
4. Add onion rings , saute for 2 mins on medium flame and add tomatoes .
5. When the tomatoes become soft , add the remaining seasonings .
6. Add 2 tbsp water and fried arbi .
7. Cook on low flame till all the seasonings gets coated well with the arbi .
8. Garnish with onion rings and serve .
Note : Ajwain and arbi is a very good combination ..So try this . Also you can add little ajwain to all your arbi recipes to enhance the taste .
