GAJAR KA HALWA (CARROT HALWA)

Ingredients :

Grated Red carrot : 1 cup
Milk : 2 cups
Sugar to taste ( one fourth cup)
Green Cardamom : 1
Ghee : 4 tbsp
Mixed Dry Fruits : 5 tbsp

Method :
1. Heat a thick bottom pan .Add Ghee ,smash green cardomom and add to  ghee .
2. Add grated carrots and keep stirring on medium flame for 5 - 10 mins.Carrots should change colour , should become little orange in colour .

3.Add milk and cook till the milk gets reduced to 10 percent of the original volume.

4. Add dryfruits and sugar and cook for another 4 mins on low flame . Keep Stirring .

5. The halwa is done . You can serve either hot or cold as per your taste buds.Garnish with nuts and serve .



Note : Many variations can be done in this recipe like you can avoid sugar and reduce milk by adding condense milk .
Khoya can also be added  and quantity  of milk can be reduced.
Few strands of saffron can also be added.
Poppy seeds can also be added.
