POTATO WEDGES



     INGREDIENTS :

     Par Boiled Potatoes : 2 
   Corn Flour : 2 tbsp
    Refined Flour : 2 tbsp
   Mixed Herbs : 1 tbsp
    Oregano : 1 tsp 
    Pepper : half tsp 
   Oil for deep frying .
  Salt to taste 

  
 Method : 

 1. For parboiling potatoes , pressure cook them for one whistle only . Cool them. Peel them .
 2. Cut into wedges .
 3.Marinade with all the ingredients and refrigerate for 1 hour .


4. Take the wedges out from fridge and dust them little so that excess flour drips off .
 5. Deep fry in medium hot oil on medium flame initially then low flame to make them crisp .
 6. Serve with ketchup.


 Note : Parboiling depends on the quality of potato . If you feel that potaoes of your region are soft then dont pressure cook for one whistle , just pressure cook for 5 mins .
 If you feel potatoes are hard , still dont cook for more than one whistle .
 One whistle is the maximum alllowed limit .
