MIX VEG IN CHEESY TOMATO GRAVY

Ingredients :

Mix Vegetables cut in cubes  : 100 gms
Tomatoes : 2
Tomato Puree : 3 tbsp
Garlic : 3- 4
Dried Parsley  : 1 tbsp
Chilly Flakes : 1 tsp
Cheese Cube : half cube
Mozorella Cheese : 50 gms
Salt to taste
Cream : 2tbsp
Oil : 1 tbsp



Method :

1. Take mix vegetables of your choice , i have used potato , carrot and french beans .Cauliflower , capsicum , green peas, mushroom and paneer can be used.
2. Blanch these vegetables till theybecome semi soft .
3. Heat a pan , add oil , garlic and thick tomato cubes . Cook covered for 8- 10 minutes.
4. Allow to cool , Crush this mixture in a grinder jar .
5 . Again heat a pan , just add 1 tsp of oil add the tomato mixture , tomato puree , salt , chilly flakes , parsley ,cream,grated mozorella cheese  and keep stirring on medium flame . Add blanched vegetables and saute for some time .

6. Add water to make thick gravy and cook covered till the  pan .leaves oil on the sides .

7. Mix veg is ready to serve . Serve with hot naan.Top the veg with some grated processed cheese.




Note : The gravy will be slightly tangy,  little sugar can be added to balance the flavours .
